Babalu Tapas to open at The Summit with Southern twists on sangria, guacamole

Babalu Tapas & Tacos is scheduled to open Oct. 23 at The Summit at Fritz Farm, its first venture in Kentucky. The restaurant, named for Desi Arnaz’s signature song on “I Love Lucy,” offers Latin-inspired dishes with a Southern twist.

“No two Babalus are alike, (but) our brand is founded on providing guests something better and different through our design, our atmosphere, our people and the guest experience we provide,” said Stan Stout, chief operating officer of Eat Here Brands, Babalu’s parent company.

The menu includes small plates of signature guacamole made tableside and other dips, plus a full bar serving margaritas, sangria, signature cocktails, craft beer and a selection of tequilas.

Other featured menu items include pan-roasted redfish with rösti potatoes, smoked corn pico de gallo and red chili butter sauce; yellowfin tuna ceviche, served with avocado, tomatoes, onions, cilantro, garlic, jalapeños and tequila-lime marinade; and dulce de leche cheesecake bites made with Kahlua caramel, Mexican chocolate and powdered sugar.

The 5,095-square-foot restaurant will feature chef’s table seating plus a large outdoor seating area with an indoor-outdoor bar.

Babalu, founded in Jackson, Miss., has eight restaurants in the Southeast. The Lexington restaurant, at 4040 Finn Way, will be open 11 a.m. to 10 p.m. Monday through Thursday, 11 a.m. to 11.p.m. Friday and Saturday, and Sunday 11 a.m. to 9 p.m. Sunday. Call 859-309-4780 for information.
